Sweet Potato Hash Breakfast Bowl


Two words. Breakfast bowls. I’m obsessed with them and with all this healthy stuff I’m trying to do they are the perfect quick healthy meal. This breakfast bowl is sauteed spinach and scallions, sweet potato hash, cottage cheese and an egg. It was filling and delicious. I’m going to try and post one of these quick meals once a week because lets face it most people don’t have the time to cook an elaborate meal and they just want something quick and healthy. 

Sweet Potato Hash Breakfast Bowl

Course Breakfast


  • 1 tbsp olive oil
  • 2 scallions
  • 1 cup raw spinach
  • 1/2 grated sweet potato
  • 1/2 cup cottage cheese
  • 1 medium egg
  • Salt and pepper


  1. In a pan heat oil until shimmering
  2. Add onions and spinach, season with salt and pepper and saute until onions are translucent place in bowl
  3. Add cottage cheese to bowl
  4. Squeeze excess water out of sweet potato, place in pan season with salt and cook until crispy, place in bowl
  5. Fry an egg in the pan, season with salt and pepper and place in the bowl
